General Information

Ingredients
For the base:
- 130 g all-purpose flour
- 80 g whole wheat flour
- 60 g hazelnut flour
- 8 g baking powder
- 160 g softened butter at room temperature
- 120 g brown sugar
- 2 eggs
- Zest of one lemon
- A pinch of salt
For the topping:
- 2 nectarines
- 3 red plums
- 1 small bunch of Concord grapes
To garnish:
- Powdered sugar
Instructions
1. Prepare all the ingredients so they are ready to use;
2. Attach the whisk tool to your Ariete Modern Stand Mixer, pour the butter and sugar into the bowl, and whip until the mixture is light and fluffy. Gradually add the eggs one at a time while continuing to mix;
3. Add the lemon zest, switch from the whisk to the paddle attachment, mix the salt and baking powder with the flours, and incorporate into the mixture;
4. Mix with the paddle attachment until the batter is smooth and uniform in color and texture;
5. Line a 30x20 cm aluminum baking pan with parchment paper, pour in the batter, and level it with a spatula;
6. Slice the fruit and arrange it on top, creating an alternating pattern with the nectarine and plum slices; add the Concord grapes and bake at 200 degrees Celsius on the middle-lower rack for about 35-40 minutes;
7. Remove from the oven and let it cool completely;
8. Turn the cake out onto a cutting board, dust the surface with powdered sugar, and cut into squares before serving.
