The waffle recipe, as delicious and impactful as it is, is fortunately very simple. They are in fact very easy and quick to prepare alone at home, and in a few minutes they can be cooked with a specific waffle plate like the one offered in the Ariete catalog. For an expert waffle batter, we will need 180g of flour, 190g of whole milk, 80g of melted butter, 60g of sugar, 2 medium eggs at room temperature, 1 teaspoon of baking powder, vanilla - 1 packet or 1 tablespoon of extract -, 1 pinch of salt and 2 tablespoons of sunflower oil.
First, we need to separate the yolks from the whites. Then we whisk the egg whites until stiff with half of the available sugar, and immediately after we also whisk the yolks, the rest of the sugar, salt, and vanilla for a few seconds, gradually adding the milk and cold melted butter. Finally, we incorporate the carefully sifted flour and baking powder, so as to obtain a soft, smooth, and lump-free mixture. Then pour the egg whites little by little into the mixture thus obtained and mix with a spatula strictly from bottom to top, so as not to deflate the batter.
