Air fryers are becoming increasingly easy to use, and new culinary tricks are being discovered every day.
Today, we present the strawberry and ricotta crumb cake with a step-by-step recipe.

Ingredients


For the dough:

  • 200 g all-purpose flour
  • 80 g granulated sugar 
  • 2 egg yolks
  • 105 g cold butter, cubed
  • 1 pinch of salt
  • Zest of 1 lemon

For the filling:

  • 150 g fresh ricotta cheese 
  • 5-6 strawberries
  • 2 tablespoons sugar


Preparation


1. In a large bowl, combine the flour with the egg yolks, a pinch of salt, sugar, cold butter cubes, and lemon zest.
2. Knead quickly with your fingertips to form a dough, wrap in plastic wrap, and let it rest in the refrigerator for 30 minutes.
3. Mix the ricotta with the sugar until creamy, then add the chopped strawberries and a bit more lemon zest.
4. Preheat the air fryer for 3-4 minutes at 200C (400F).
5. Divide the dough in half and, on a sheet of parchment paper, shape one half into a disk the size of the air fryer basket, slightly raising the edges.
6. Pull out the basket, place the parchment paper with the dough base inside, and fill with the ricotta and strawberry cream; then crumble the remaining half of the dough over the top.
7. Cook at 160C (320F) for about 30 minutes.
8. Remove and let it cool completely before taking it out of the basket, then dust with powdered sugar.
