Super versatile, in the kitchen it can be used both as a spreadable cheese and as an ingredient in numerous dishes like risottos or other pasta courses. With just a few ingredients, thanks to Ariete B-Cheese, you can create creamy homemade Stracchino right in your own kitchen.

Ingredients for Homemade Stracchino

  • 1.5 L whole milk
  • 50 g Stracchino cheese (starter)
  • 5 mL rennet
  • 10 g fine salt

Preparation: Stracchino Cheese Maker Recipe

  1. Add 1.3 L of milk into the cheese maker's container, add the salt, and dissolve thoroughly.
  2. Melt the 50 g of Stracchino (starter) in the remaining 200 mL of milk set aside.
  3. Add the melted Stracchino to the rest of the milk, mixing well, and insert the cheese basket.
  4. Start PROGRAM 1 "CLASSIC CHEESE WITH RENNET" on your Ariete B-Cheese.
  5. At the "RENNET" indicator beep, add 5 mL of rennet dissolved in 15 mL of water, stirring gently. Stop the movement of the milk by stirring in the opposite direction, press "OK," and cover.
  6. At the "SPATULA" indicator beep, cut the curds into 2 or 4 parts and press "OK."
  7. At the "ADD" indicator beep, ignore it and press "OK."
  8. At the "UP ARROW" indicator beep, lift the basket and place it on top of the machine to drain. Press OK and wait for 2 hours until the "END" indicator beeps.
  9. Remove the 2 pieces of curd and transfer them into a storage container, stacking them. Let them rest for 12 hours in the fridge before consuming.
  10. The **homemade Stracchino** becomes truly creamy after the 3rd day of rest in the refrigerator. It can be stored for a maximum of 7 days.
