Preparation

Prepare the green sauce

Prepare the salsa verde by putting washed parsley, capers, anchovies, bread and a drizzle of oil in a blender. Once chopped, pour the mixture into a bowl and adjust to taste with salt, pepper, oil and white wine vinegar.

Boil potatoes

Boil the potatoes in a saucepan until soft enough by poking them with a fork or cook them in an air fryer at 200 degrees for 15-20 minutes.

Remove the potato pulp

Using a spoon, hollow out the filling, being careful to leave some of the pulp and not to break the outer skin.

Create the filling

Place the extracted pulp in a bowl by mashing it with a fork, then, once cold, add the chopped leek, diced provolone and bacon cut into sticks. Season with salt and pepper to taste.

Cook the stuffed potatoes in the air fryer

Fill the potatoes with the well-mixed mixture and place them in the basket of the air fryer. Bake at 190° for 8 to 10 minutes.
